{ Simple Vegetarian Cheesesteak Sub Recipe }

Happy Friday friends!! Today has been a very average day & it felt GREAT! I'm just enjoying our little suburban cottage, hot chocolate, pups & some much needed blogging/ music session! As I was updating the blog I stumbled on some recipes &  thought "wow" haha I haven't shared a recipe in ages it seems.. Truth be told I usually cook a home cooked meal at least 3-4 times a week & they're usually either vegetarian, chicken or soy based! If you've been following my blog for the last 3.5 years you would most likely know I don't eat beef or pork. I've always been a picky eater & meat has always grossed me out & I'm allergic to beef on top of it all. I cut both out years back for both personal, health & ethical reasons. Before anyone starts sending the mass amounts of emails about "Why do you still eat chicken then", well I'm in the process of quitting that too. With all that being said, sometimes it's difficult to find dinners to make that don't contain beef or pork..I do occasionally crave these things, but use substitutes with protein & half the fat! Although my husband still eats meat, it's not as much & he LOVES my veggie food with this recipe I'm sharing today being at the top of the list!!

R E C I P E:

  • 1 pack of steak subs
  • 2-3 green peppers sliced or cubed
  • 1 large onion { any color }
  • 1 stick light butter
  • half teaspoon cayenne pepper
  • salt + pepper to preference
  • Pinch of garlic powder
  • Cup of shredded mozzarella cheese
  • 1 bag +gardein beef meat crumbles
  • 2 tablespoons mayo/ light mayo
  • Swiss cheese slices or light swiss, provolone etc..

Side Note: You can find the Gardein brand of beef crumbles at your local +Walmart  or +Target . I prefer this brand over the other leading two brands!
 .

D I R E C T I O N S:

Take out the bag of beef meat crumbles & set them aside for 5-10 minutes on the counter. While the meat is getting thawed a bit grab a pan & add the stick of butter on low heat while you chop the green peppers & onions. Add the green peppers, onions, garlic, salt/ pepper & cayenne to the butter or oil { which ever you decide } & let the veggies & spices cook for 5-10 minutes or until tender/caramelized. Next take the meat & add to your mixture & add the mayo & cheese. Let cook for 10 minutes or until everything is coated etc..
Grab the subs & open them & place one piece of the sliced swiss on the bottom of the roll, fill with meat mixture & top with another half a slice of swiss & bake in the oven for 5-10 or until cheese is gooey, not crisp or bubbling.

Serve with light kettle chips or your choice!

E N J O Y!

I really hope y'all LOVE this yummy spin on a classic hearty sub! Let me know if you try this recipe & what you think about using the substitute etc..

Happy FRIDAY!
